Origin and Terroir
Estate: Joseph Mellot, a historic Sancerre vineyard founded in 1513, ISO 14001 certified and committed to sustainable and reasoned viticulture
Area: The Le Troncsec vineyard covers approximately 9.5 hectares
Grape: 100% Sauvignon Blanc, the classic grape of Pouilly Fumé
Terroir: Chalky and flinty soils that bring a characteristic minerality and liveliness to the wine

Vinification and Aging
Harvest: Early October
Vinification: Destemmed, fermented in stainless steel tanks to preserve freshness and fruity aromas
Aging: Aged in tanks, without barrel aging to preserve aromatic purity

Organoleptic Characteristics
Appearance: Pale yellow with green highlights
Nose: Intense, marked by notes of citrus (orange, mandarin, grapefruit), yellow fruits (peach, mirabelle plum), and a touch of minerality
Palate: Soft start, with a beautiful acidity balanced by a final salinity, marked tension, and a pleasant length

Presence of power and richness that allow the wine to be structured with finesse

Tasting Recommendations
Serving temperature: Between 8 and 12°C, depending on the vintage and preference between freshness and the enhancement of aromas
Recommended timing: To drink within 3 to 5 years after harvest, ideally the 2019 between 2020 and 2023

Food & Wine Pairings
Excellent harmony with seafood, oysters, and shellfish thanks to its minerality

Poultry dishes with citrus, blanquette de veau, and regional cheeses such as Crottin de Chavignol

Can also accompany fine charcuterie or lightly spiced dishes to balance the tension of the wine
