Winemaking and Aging
Harvest: Manual, rigorous sorting at the winery
Maceration / Fermentation: Fermentation in temperature-controlled wooden vats, 3 to 4 weeks
Aging: 14 to 16 months in oak barrels (20-30% new barrels)
Serving temperature: 15-18°C, ideal for tasting after decanting
Tasting Notes
Appearance: Bright garnet red
Nose: Aromas of cherry, blackcurrant and fig, with floral notes (violet, rose, peony), evolving towards pyreumatic notes, coffee and leather with age
Palate: Powerful, structured, round, with ripe and silky tannins, dense but elegant and subtle texture. Long and velvety finish
Food and Wine Pairings
Meats: Roasted or grilled (beef, veal, game, duck, pork)
Slow-cooked dishes: Beef bourguignon, civets, dishes in sauce
Cheeses: Époisses, aged Comté, local character cheeses
Particularities of the Estate and the Clos
Historical monopole: Clos des Ursulines, former orchard of the Ursulines, calm and protected by century-old trees
Wine style: Powerful and structured but nuanced and almost feminine thanks to its proximity to Volnay, combining the power of Pommard with the elegance of its neighbors
