Appearance: Bright pale pink, fine and delicate bubbles

Nose: Intense aromas of fresh red fruits such as redcurrants and raspberries, subtle floral notes (rose, lilac) and yellow fruit depending on the cuvée

Palate: Zesty attack, generous body and perfectly balanced

Finish: Silky, subtly saline with a slight hint of sweetness, lingering and refreshing

Vinification and de-alcoholization

Method: Vacuum evaporation (Spinning Cone) at low temperature (≤35°C) to remove the alcohol while preserving the aromas and natural freshness of the grapes

Aging: One part aged in wood for creaminess, the other aged cold on fine lees to enrich the texture and volume, with regular batonnage

Objective: To maintain the original balance and elegance, faithful to the spirit of classic sparkling wine but without alcohol

Serving temperature: 6–8 °C for tasting bubbles, 10–12 °C for moderate storage
