Vinification and aging

Vinification is carried out in temperature-controlled stainless steel tanks at a high temperature of 30°C, including daily pump-overs, punch-downs, and maceration for 3 to 5 weeks.
Aging takes place in a climate-controlled cellar for 14 to 18 months, divided into thirds: one third in new French oak barrels, one third in one-wine barrels, and one third in two-wine barrels. Fining is carried out with egg whites before light filtration, and bottling takes place at the château

On the palate, it is medium-bodied, supple, and fruity with a beautiful harmony. For recent vintages (such as 2019), the wine is often described with notes of black fruits, cherry, and mocha, and firm but elegant tannins, with a mineral and structured finish.
