Origin: Côte des Blancs, Grand Cru d’Avize

Plot: 60 ares planted in 1959, ploughed by a mare named Vénus

Grape variety: 100% Chardonnay

Soil: Clay at the bottom of the plot, very chalky at the top — bringing intensity, freshness and minerality

🍇 Winemaking & Aging
Vintage: 2017 (also available in 2018 depending on the vintage)

Winemaking: Exclusively in wood (fewer than 10 demi-muids)

Malolactic fermentation: Done

Dosage: Extra Brut (between 0 and 6 g/l)

Aging: On the lees for 72 to 84 months
